Make it, step by step
- Wash and dry the clementines before peeling. Rinse the celery under running water. Use a clean board and knife.
- Peel each clementine gently, keeping the fruit whole. Remove loose strands of white pith without pulling the segments apart.
- Cut eight short, thin celery stems, roughly 3/4 inch long. Press one gently into the natural opening at the top of each fruit; do not force it through the fruit.
- Arrange on a clean serving plate just before serving. For young children, remove the firm stem and separate or cut the fruit into pieces appropriate for their eating skills.

Keeping it lovely
Prepare the same day, cover and refrigerate at 40°F or below until serving. Return cut or peeled produce to refrigeration promptly; discard if left out over 2 hours, or 1 hour above 90°F.
